Looking for something different than traditional Xmas dinner? At this very exceptional night at The Elmore Jam, right a week before the Christmas Day come along with your colleagues, friends and family to try traditional Portuguese Christmas dishes with a contemporary master chef's touch by Pedro Passinhas and his chef trio! Accompanying the kitchen will be a live trio headed by pianist Barney Musician.
On the menu, Caldo Verde, an iconic soup with cabbage strands and the light smoke flavour from the chorizo. Originally it’s a soup of the North, the area between Minho and Douro. Very particular, has to be served with the cabbage cut in a distinctive way.
Another must-be on the Portuguese menu is Baked Salted Cod or Bacalhau. Salted cod is a major ingredient in the Portuguese diet. The legend goes that the Portuguese have 365 or more recipes for this dish-one for each day of the year.
Pedro Passinhas is Michelin Trained Chef, Le Cordon Bleu Grand Diplome Graduate, Creator of Modernist Cuisine, Explorer of Mutli-Sensory Eating. He believes in challenging people’s perception of food and taste. He uses unusual flavours, colours, textures and temperatures to enliven the dining experience and send your senses soaring. Pedro and his team of 2 sous chefs create an amazing cooking performance and exceptional dining experience for his guests.

'A great dining experience is about more than just the food. My childhood memories are defined by my flavour, family and dining together, and whilst my tastes have evolved and my technical skills have grown, this sense of community still defines my approach to food.
And here’s the fun part. Before I started my cooking career I was just a little science geek. So much so that I pursued a degree in engineering until, one day, my true calling came knocking at the door. I enrolled at Le Cordon Bleu and went on to chef at some of the world’s finest restaurants led by Michelin starred chefs, including Fat Duck, Le Gavroche, Galvin @ Windows.'
The Elmore Jam's resident father (Nick) & daughter (Ro) team have backgrounds in show production and design, as well as hospitality. Being the entertainment officer has always come easily to Nick and he loves hosting people in his home, a truly unique space with an open kitchen. Their focus is on getting delicious food prepared by a rotation of professional, exciting chefs to your plate whilst you enjoy socialising to a backdrop of live musicians–all the ingredients for a good night.
